They suggested mead was a bit like wine in that it got better when you let it age. One guy on the panel also said he liked to use champaign yeasts and a similar process to how champaign is made so bubbly to make a 'sparkling mead'.
I had at least one grandparent who was arguably a functional alcoholic. Which may be part of why neither of my parents drank or kept alcohol until us kids had moved out. Even now they don't keep enough that one could do much of a binge. Just a few bottles of beer and a couple bottles of wine at a time.
